Gurmar (Gymnema sylvestris) is an Indian plant belonging to the Apocynaceae family, used in Ayurveda to control body weight and improve metabolism. Gurmar inhibits the perception of sweet taste and has a hypoglycemic effect, which is why it is called a "sugar killer."
The main compounds responsible for the biological activity of gurmar are glycosides – gymnemic acids. These substances stimulate insulin secretion, regenerate pancreatic β-cells, stimulate glucose absorption in skeletal muscle, inhibit glucose absorption in the small intestine, reduce cravings for sweet foods, increase the activity of enzymes responsible for glucose utilization, and reduce glycogen levels in the liver. Gymnemic acids block taste receptors and inhibit the perception of sweet or bitter taste.
